SUKAMY HI Thermo-Stable Amylase

Amylase enzyme is widely used in brewery, in the manufacture of starch, starch sugar, gourmet powder, antibiotics, etc. It is also used in the production of glucose syrup, high fructose syrups and starch hydrolysis for alcohol production and the liquor industries. Starchy substrates like corn starch need to be acted upon by alpha-amylases at consistent high temperature to produce shorter length dextrins. The dextrins produced by a-amylase are acted upon by exo-splitting glucoamylase which readily attack the terminal a-1,4 and a-1,6 glucosidic linkages from the non-reducing end of the released dextrines to produce 6-carbon b-D-glucose units. The enzyme also possess the ability to hydrolyze a-1,6-glucosidic linkages in isomaltose and dextrins. Starch, a high polymeric carbohydrate is a mixture of two polysaccharide, amylose and amylopectin. Amylase in humans is produced mainly in the pancreas and the glands that make saliva. When the pancreas is diseased or inflamed, amylase releases into the blood. The enzyme in human saliva begins the chemical process of digestion. Foods that contain starch but little sugar, like rice and potato, taste slightly sweet as they are chewed because amylase in the saliva turns some of the starch into sugar. It is highly efficient in breaking starch down into sugar. Amylase isolated from bacteria is used in textile industry as softening agents for starched clothes. Starch is often added to cotton fiber as a stiffener before weaving it into cloth. Starched cloth, however absorb color or dye poorly so the cloth needs to be de-starched before dying. Amylase preparations are then used to hydrolyze the starch. Other major uses of amylase are in the brewing of beer, starch sugar, alcohol or ethanol production and dishwashing detergent.   • WHAT IS SUKAMY HI?
    SUKAMY HI is an enzyme preparation consisting of stable high thermal amylase. Bacillus licheniformis is used in the production of a-amylase. This special amylase is a glycoside hydrolase and act on a-1,4-glycosidic bonds. Alpha-amylases (endo-a-1,4-glucan 4-glucanohydrolase) are endo-acting enzymes which specifically cleave a-1,4 D-glucosidic linkages in gelatinized starch randomly to produce dextrins of varying lengths, thereby reducing the high viscosity of the starch slurry. Oligosaccharides, glucose and maltose are also produced in the biological process.   • HOW DOES IT WORK?
    By acting at random locations along the starch chain, a-amylase breaks down long-chain carbohydrates, ultimately yielding maltotriose and maltose from amylose, or maltose, glucose and limit dextrin from amylopectin. Because it can act anywhere on the substrate, SUKAMY HI tends to be faster-acting than ß-amylase based products. It is highly effective in breaking down starches in the textile production processes. SUKAMY HI tolerates high temperature and remains stable. Polymeric carbohydrate like starch is a mixture of two polysaccharide, amylose and amylopectin. Starchy substrates like corn starch need to be acted upon by high-temperature, stable a-amylase to produce shorter length dextrin. SUKAMY HI is also ideal for the manufacture of starch sugar (glucose, malt syrup, dextrin, oligosaccharide) and alcohol, brewery, glutamate, textile, dye & printing, paper making etc.
  • CHARACTERISTICS:
    SUKAMY HI provides maximal benefit with pH range: 6.0 to 6.5 and temperature range of 95 to 97 (203°F to 207°F). The product has a pH range of 5.5 to 8.0 and retains its activity up to 100. A co-factor such as Ca2+ at a concentration of 50 ppm to 70 ppm is required for optimal activity.

  • PACKAGING:
    SUKAMY HI LQ 20 (liquid preparation) is packaged in 25 kilograms per plastic drum. SUKAMY HI PW 4 and PW20 (solid preparation) are packaged in box or plastic lined bags. Alternative packaging is available upon the request for smaller or larger quantities.
  • APPLICATION & DOSAGE:
    Starch Sugar: SUKAMY HI is used in the manufacture of starch sugar of gourmet powder. With a starch syrup concentration of 16B to 17B and pH of 6.0 to 6.5, the enzyme is added at the rate of 0.6 liter per ton (when using SUKAMY HI LQ 20, the 20,000 U/ml product). The mixture is stirred and the temperature is raised and kept at 95 to 100 for 100 minutes or 60 to 120 minutes at 95 or in case of steam (105) injection method is used. Beer: In brewing of beer, add SUKAMY HI in one batch at the rate of 0.3 liter per ton (when using SUKAMY HI LQ 20, the 20,000 U/ml product). The temperature of the mixture is raised and kept at 95 to 97 for 30 minutes. Alcohol: In the manufacture of alcohol, SUKAMY HI is added at the rate of 0.3 liter per ton (when using SUKAMY HI LQ 20, the 20,000 U/ml product) and at pH 6.5 to 7.0. The temperature is raised and kept at 100± 5 for 100 minutes.
  • STORAGE:
    Store in a cool, dry place and away from direct sunlight. SUKAMY HI maintains its activity for considerably longer time when stored at lower temperatures (below 25). However, the product should not be frozen. Keep out of reach of children.
  • HANDLING:
    Even though SUKAMY HI is not toxic and is biodegradable, direct inhalation and ingestion should be avoided. In case of accidental contact with eyes, rinse immediately with water. Unnecessary contact and long term exposure to the product should also be avoided particularly for individuals who exhibit sensitivity to it. Wash hands with warm soapy water after handling.
